I developed this recipe as part of my courtship of my wife when I was still new to the New Orleans food culture. I'd been making fruit salsas with peaches, nectarines and pineapples for years, but had never had access to fresh mangoes before moving there. Finally, the perfect fruit had been found to pair perfectly with the onions, ginger and habanero peppers that I had always included in my fruit salsas. The other thing that made my salsa recipes unique was that I made them with fruit as the base, not an afterthought to the tomatoes. With my discovery of mangoes, the recipe was complete. After Hurricane Katrina flooded my New Orleans home, I relocated to suburban Atlanta and—since there isn't a huge call for university library administrators as compared to cardiac nurses (like my wife)—I found myself a stay-at-home dad who could finally bring my popular recipe to market. It took several attempts to find a co-packer that shared my vision of an all-natural product, perfectly balanced and layered with flavors, but I did secure one and my 'Citizen Cajun' mango-habanero salsa is now available for you to enjoy where ever you find yourself to be.Fruit salsa should be about fruit, not tomatoes.
